Why is this: ...eo-url.com/demo/oscommerce/the-matrix-6 without the category?

Shouldn't it read ....eo-url.com/demo/oscommerce/dvd-movies-3/action-10/the-matrix-6

There are live stores with MSU that do have category shown, like this one:

http://www.modell-ovp.de/en/dump-truck-43/cat-730-1234.html

Is this a setting?

Yes. You can change it in includes/msu_tweak.ini file.
